The article examines the composition and structure of the fat and oil subcomplex of the agroindustrial complex, identifies the features of the formation of economic relations between its subjects based on economic interests. In the structure of the economic interests of the subjects of the fat and oil subcomplex of the agroindustrial complex, the following are highlighted: need as an internal state of resource scarcity, value as the predominance of certain certain modes of action over others, motive as an incentive for any action, incentive as a benefit when performing certain actions, as well as the specifics of their formation. It is concluded that the most difficult and problematic issues remain the formation and development of economic relations between economic entities-agricultural producers and rural population with other entities of the fat and oil subcomplex. This is due, firstly, to the specifics and complexity of the type of activity of agricultural producers, as the main producers of oilseeds and vegetable oils, compared with the activities of subjects of the I, II industries and enterprises of industrial and social infrastructure, and secondly, the conditions and quality of life of the rural population, as opposed to urban. It is established that the formation and development of economic relations in the fat and oil subcomplex of the agroindustrial complex is carried out on the basis of a state-market regulatory mechanism. At the same time, the state implements the effectiveness of regulating economic relations in the fat and oil subcomplex based on the application of various administrative and financial measures of influence on its subjects.
